RECIPE: Chocoberry protein energy bars

This is a fabulous recipe for some good for you (clean if you want) protein energy bars from genius baker Gillian of Bob’s Brownies

Packing some serious protein, slow release low GI carbs, good fats, vitamins, minerals, antioxidants, flavonoids, omega 3 and fibre. As these bars are nutrient dense they’re brilliant any time of the day. They’re also great to take along as speedy post workout fuel. Recently I used them pre race to outstanding effect (great, sustained energy boost with no cramping)

Ingredients Method
  • 300g dates
  • 1 1/2 cups frozen berries
  • 1/2 cup almonds
  • 1/3 cup cocoa (or 1/2 cup cacao if going #raw)
  • 1/2 cup ground flaxseed
  • 1/2 cup sesame seeds
  • 1 cup mix of hemp, pea and rice protein (or just use 1 cup hemp protein)
  • 1 tbsp lemon juice
  • 1/2 tsp sea salt flakes (or to taste)
  • 2 tbsp shredded coconut
Heat a sauté pan then dry fry coconut until golden brown and aromatic. Leave to cool.

Blitz everything else in a food processor until as smooth or chunky as you like. If it’s looking a little too mushy or dry add more dry or wet ingredients (it’s a bit experimental this one).

Tip out onto a parchment lined tray then spread as best you can – I put another sheet of parchment on top then push the mixture around through the parchment.

Sprinkle the toasted coconut on top then cut into bars (I go for around 20). Place tray in freezer.

Once frozen, remove bars from tray then bag up together or individually wrap.

Great straight from the freezer. Great to take along wherever. Just grab one or two when needed. Good for you gorgeousness
