RECIPE: Lionish energy bars

Another fabulous recipe from genius baker Gillian of Bob’s Brownies.
This time is Lion bars, sort of – good for you, energy giving Lionish bars

Remember the old days when we ate Lion bars?!! Well that’s what came to mind with this latest invention; crispy, chewy, nubbly, rich chocolateyness… But without the nasties. Result!

Ingredients Method
  • Few chunks of 70% cocoa chocolate (use high quality chocolate that contains cocoa butter instead of milk solids)
  • Couple tsp coconut oil
  • Tsp creamed coconut
  • Couple spoons of peanut or almond butter (optional)
  • Couple handfuls wholegrain pufffed rice
  • Handful dates, chopped
  • Pinch sea salt flakes
  • Handful shredded coconut
  • Handful pumpkin seeds
Melt chocolate, coconut oil, creamed coconut and nut butter, if using. Add puffed rice, dates and sea salt flakes, testing to see if you need any more of anything. Press into a parchment lined dish. Toast shredded coconut and pumkpin seeds in a dry pan until coconut is golden and fragrant and pumkpin seeds are beginning to pop then sprinkle over and push down into waiting chocolate crispie. Refrigerate until cool and firm then chop into slices and quickly stash in a food bag in the freezer (to be honest you can keep them in the fridge too but I find freezing helps them stay out of sight – and so mind). Having said that, they taste fantastic straight from the freezer – resistance is pretty much futile with these!
